Roasted Chicken Supper

A full cast-iron meal built around roasted herbed chicken, crisp potatoes, and a soft barley-rice mash.

Cook This In Order

  1. Start the barley-rice mash first so the grains can simmer while the rest of the meal comes together.
  2. Parboil and crush the potatoes while the mash cooks.
  3. Season and brown the chicken, then move it to the oven.
  4. Roast the potatoes alongside or after the chicken, depending on pan space.
  5. Rest the chicken while finishing the mash and crisping the potatoes.

Roasted Herbed Chicken

  • 2 chicken thighs, preferably bone-in and skin-on
  • 1 chicken breast, preferably bone-in and skin-on
  • 1 tablespoon lard or cold-pressed rapeseed oil
  • 1 teaspoon crushed juniper berries
  • 2 garlic cloves, crushed
  • 1 teaspoon dried thyme or fresh thyme leaves
  • Sea salt, to taste
  • A small splash of mead or apple cider, optional

Roasted Potatoes

  • 2 large potatoes, skin-on
  • 1 tablespoon duck fat or lard
  • 1/2 teaspoon dried rosemary or wild thyme
  • Sea salt, to taste

Barley-Rice Mash

  • 1/2 cup pearl barley
  • 1/2 cup short-grain rice
  • 2 cups water or broth
  • Pinch of salt
  • Optional: chopped leek or onion sauteed in fat
  • Optional: butter or beef drippings, to finish
