Southwestern Skillet Pork Chops

Ingredients

  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 3-4 thick-cut bone-in pork loin chops (about 1 1/4 inches thick)
  • 1 tablespoon vegetable oil
  • 1 cup chopped plum tomatoes
  • 1 can (4 oz) diced green chilies
  • 1/4 cup orange juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Combine chili powder, salt, garlic powder, oregano, cumin, and black pepper.
  3. Rub the seasoning mixture over both sides of the pork chops.
  4. Heat vegetable oil in a large cast iron skillet over medium-high heat.
  5. Sear pork chops for about 4 minutes per side until browned.
  6. Transfer the skillet to the oven.
  7. Bake for approximately 12 minutes, or until pork reaches 145 degrees F.
  8. Remove pork chops and tent loosely with foil.
  9. Return the skillet to the stovetop.
  10. Add tomatoes and green chilies.
  11. Cook for about 3 minutes while scraping up browned bits.
  12. Stir in orange juice.
  13. Cook another 2 minutes until slightly reduced.
  14. Stir in cilantro.
  15. Return pork chops and any juices to the skillet.
  16. Spoon sauce over the pork before serving.
