Open-Face Steak and Blue Cheese Sandwiches

Ingredients

  • 4 boneless beef top loin (strip) or tenderloin steaks, cut 3/4-inch thick
  • Black pepper
  • Salt
  • 1 teaspoon olive oil
  • 4 slices ciabatta bread
  • 8 thin slices blue cheese

Instructions

  1. Season the steaks generously with black pepper.
  2. Heat olive oil in a large cast iron skillet over medium heat.
  3. Add steaks without overcrowding the pan.
  4. Cook for 10-12 minutes, turning once, until medium-rare (145 degrees F) or your preferred doneness.
  5. Transfer steaks to a cutting board.
  6. Tent loosely with foil and let rest for 5-10 minutes.
  7. Slice the steaks thinly.
  8. Season lightly with salt.
  9. Toast the ciabatta slices.
  10. Top each slice with two slices of blue cheese.
  11. Arrange sliced steak over the cheese.
  12. Serve immediately.
