Fajitas

Ingredients

  • 1/3 cup fresh lime juice
  • 1/4 cup corn or vegetable oil
  • 2 tablespoons Fajita Seasoning Mix (recipe below)
  • 1 pound chicken or pork, thinly sliced
  • 1/2 white or red onion, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 red bell pepper, sliced
  • Flour tortillas, warmed
  • Optional toppings:
  • Grated cheese
  • Fresh cilantro
  • Sliced avocado
  • Diced tomatoes
  • Salsa

Instructions

  1. Combine lime juice, oil, and 2 tablespoons of fajita seasoning.
  2. Add meat and marinate for 1 hour.
  3. Remove meat from marinade and discard the marinade.
  4. Heat a large cast iron skillet over medium-high heat.
  5. Add meat, onion, and peppers.
  6. Cook, stirring frequently, until the meat is cooked through and vegetables are tender.
  7. Spoon into warm tortillas.
  8. Add desired toppings and serve.
