Ingredients

  • 8 ounces haddock
  • 3 cups whole milk
  • 2 tbs butter
  • 4 medium potatoes
  • 1 medium onion

Instructions

  1. Dice 8 ounces of haddock haddock and set aside, chop the potatoes into 1x1" cubes, mince 1 medium onion.
  2. Melt butter in large saucepan, add minced onion and cook on medium heat for a few minutes, until the onions are soft. They should not be transparent.
  3. Next add diced potatoes and 3 cups of whole milk.
  4. Cook for 15 to 20 minutes until the potatoes are tender. The milk should thicken as the starch comes out of the potatoes.
  5. Add the diced haddock and cook for five minutes. Don't over cook the haddock.
  6. Salt and pepper to taste.
