Crispy Buttermilk Fried Chicken
Ingredients
- 2 cups buttermilk
- 1 tablespoon hot pepper sauce
- 3 pounds bone-in chicken pieces
- 2 cups all-purpose flour
- 2 teaspoons salt
- 2 teaspoons poultry seasoning
- 1 teaspoon garlic salt
- 1 teaspoon paprika
- 1 teaspoon ground red pepper
- 1 teaspoon black pepper
- 1 cup vegetable oil
Instructions
- In a large resealable bag, combine buttermilk and hot pepper sauce.
- Add the chicken and coat thoroughly.
- Refrigerate for at least 2 hours or up to 24 hours.
- In another large bag or shallow bowl, combine flour, salt, poultry seasoning, garlic salt, paprika, ground red pepper, and black pepper.
- Remove chicken from the marinade and shake off excess liquid.
- Coat each piece thoroughly in the seasoned flour.
- Heat vegetable oil in a large cast iron skillet to approximately 350 degrees F.
- Fry the chicken in batches, turning occasionally.
- Cook for about 30 minutes, or until the internal temperature reaches 165 degrees F and the coating is golden brown.
- Drain on paper towels.
- Keep warm while cooking remaining batches.
- Serve immediately.
