Chicken Burgers with White Cheddar
Ingredients
- 1 1/4 pounds ground chicken
- 1 cup plain dry bread crumbs
- 1/2 cup diced red bell pepper
- 1/2 cup ground walnuts
- 1/4 cup sliced green onions
- 1/4 cup light-colored beer
- 2 tablespoons chopped fresh parsley
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 3/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon vegetable oil
- 4 slices white Cheddar cheese
- 4 whole wheat buns
- Dijon mustard
- Lettuce leaves
Instructions
- In a large bowl, combine the ground chicken, bread crumbs, bell pepper, walnuts, green onions, beer, parsley, lemon juice, garlic, salt, and black pepper.
- Mix gently until just combined.
- Form into four equal patties.
- Heat vegetable oil in a large cast iron skillet over medium-high heat.
- Cook patties for 6-7 minutes per side, or until they reach an internal temperature of 165 degrees F.
- Place one slice of white Cheddar on each burger and cover the skillet until melted.
- Toast the buns if desired.
- Spread Dijon mustard on the buns, add lettuce, then top with the chicken burgers.
- Serve immediately.
