Chicken Burgers with White Cheddar

Ingredients

  • 1 1/4 pounds ground chicken
  • 1 cup plain dry bread crumbs
  • 1/2 cup diced red bell pepper
  • 1/2 cup ground walnuts
  • 1/4 cup sliced green onions
  • 1/4 cup light-colored beer
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 3/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 4 slices white Cheddar cheese
  • 4 whole wheat buns
  • Dijon mustard
  • Lettuce leaves

Instructions

  1. In a large bowl, combine the ground chicken, bread crumbs, bell pepper, walnuts, green onions, beer, parsley, lemon juice, garlic, salt, and black pepper.
  2. Mix gently until just combined.
  3. Form into four equal patties.
  4. Heat vegetable oil in a large cast iron skillet over medium-high heat.
  5. Cook patties for 6-7 minutes per side, or until they reach an internal temperature of 165 degrees F.
  6. Place one slice of white Cheddar on each burger and cover the skillet until melted.
  7. Toast the buns if desired.
  8. Spread Dijon mustard on the buns, add lettuce, then top with the chicken burgers.
  9. Serve immediately.
