A heavy breakfast built from hot buttermilk biscuits and sausage gravy, with the gravy started while the biscuits bake.

Cook This In Order

  1. Start the biscuits first and get them into the oven.
  2. Brown the sausage while the biscuits bake.
  3. Build the gravy after the sausage is browned.
  4. Split the hot biscuits and spoon the gravy over the top.

Buttermilk Biscuits

  • 1 cup (240 ml) buttermilk
  • 8 tablespoons butter
  • 2 cups (250 g) all-purpose flour, plus extra for the work surface
  • 1 tablespoon sugar
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3/4 teaspoon table salt

Sausage Gravy

  • 1 lb (455 g) pork breakfast sausage, preferably sage-flavored
  • 1 TBS butter
  • 1/4 cup (31 g) all-purpose flour
  • 2 1/2 cups (590 ml) whole milk
  • Salt and pepper to taste
